Ingredients & Equipment

Ingredients

  • 1 cup of whole milk
  • 1 cup of heavy cream
  • 3/4 cup granulated sugar
  • 1/8 tsp salt
  • 1/2 cup orange juice
  • 1/3 cup lime juice
  • 6oz fresh raspberries
  • orange food coloring
  • green food coloring

Step 1: Make Bases

Mix Base on Stove & Put in the Fridge!

In a saucepan combine milk, sugar, cream, and salt on medium heat on the stovetop. This is the plain base you will use for all the different flavors in your Rainbow Sherbert.


Then put the mixture in a fridge & freezer safe container and leave in the fridge overnight to chill.

Step 2: Combine Bases

Make the Different Sherbert Bases and Combine Them!

Puree the raspberries and put the mixture in the fridge to chill until the container you put it in is cold to the touch. Once you have your cold raspberry mixture, grab your orange and lime juice too!

Grab the plain base you made from Step 1. Divide the plain base into three different bowls and fold in the raspberry puree and juices to make each different flavor. Add food coloring in this step for more vibrant colors.

Place each flavored mixture into a seperate piping bag and freeze them for 45 minutes. Then alternate piping out each flavor into one freezer-safe container to combine all flavors into one sherbert.

Step 3: Freeze and Serve

Freeze Final Sherbert, Serve, Eat, and Save For Later!

Now all you need to do is freeze your Rainbow Sherbert until it's firm and can be scooped. This usually takes about an hour.

Once your Rainbow Sherbert is ready, serve it to your friends or keep it all to yourself! If you have leftovers, just cover the top of the sherbert and store it in the freezer like any other icecream!
